GF Recipe: Christmas Candy Men

Here is one of my easy gluten free recipes for you all which also works well using flour containing gluten:

Set oven to 150 degrees (130 if fan assisted, gas mark 2)

Ingredients:

  • 125 g very soft butter
  • 125 g brown caster sugar
  • 2 tbsp milk (can be skim, semi skim or whole)
  • 175 g of gluten free (or regular) self raising flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 50 g crushed candy cane (approx 3 regular sized canes)

Method:

  1. Cream together the butter and sugar
  2. Beat in the milk
  3. Add flour and spices and mix until you have a stiff dough
  4. Put the candy canes into a double carrier bag
  5. Bash bagged candy canes on hard surface until broken into a mix of  powder and small chunks
  6. Add the candy cane pieces to the dough and mix until combined
  7. Press or roll dough out on a floured surface until it is a uniform thickness
  8. Cut out shapes or roll into small balls and flatten with a fork
  9. Bake for 20 – 25 minutes on a cookie tray
  10. Cool completely before removing from cookie tray
