A Halloween Treat from Australia

So Annie’s class is having a Halloween party on Friday, this is following on from learning about Indian celebrations over the last few weeks and next week the class are learning about Melbourne Cup day and soon it will be Christmas. The focus of this term for their general studies unit is ‘Celebrations’.

Now Annie does not usually go to school on Friday because that is our home school day. But she has really really gotten excited about this Halloween Party – she even has a costume all picked out. So we got special permission to go to school for the Halloween morning tea on Friday. Our special treat that we are contributing to the morning tea is Pumpkin Pie.… or as Annie calls them ‘Pumpkin Tart’ because they don’t have a lid, thus they can not be called pie.

It is such a simple recipe to make.  I roast the pumpkins in the oven to cook as that helps reduce moisture content – also make sure to use Grey or similar low moisture pumpkin, otherwise your pie filling is too watery.

Pumpkin Pie

1/8 tsp. salt
2/3 cup white sugar
1 tsp. cinnamon
¼ tsp. nutmeg
½ tsp. ginger
2 eggs
1 2/3 cup whole milk
1½ cups mashed cooked pumpkin

Beat eggs slightly. Sift dry ingredients together and stir in. Add milk and pumpkin and mix. Pour custard into an unbaked pie shell; bake at 450°F for 10 minutes; then reduce temperature to 325°F and bake 35 minutes longer.

You can also add 1/3 cup chopped nuts to the unbaked custard.  A step we obviously skip due to Heidi’s nut allergy.

I’ve made this using soy milk and it is super tasty. I’ve also used the pumpkin custard filling mix to make ice cream ::drool:: seriously so good.

For the school Halloween Party we are using the little mini tartlet cases from Pampas. Much easier to serve individual portions that way.
